Mutton Bafat

MUTTON  BAFAT
(a  sweet and sour tasty Parsi Dish)

Ingredients
500 gms. Boneless Mutton cubes
1 tabsp. Ginger Garlic paste
2 Onions chopped fine
6 potatoes chopped into big pieces
5 tomatoes pureed
2 tabsp. Pure Ghee or Butter
250 gms peas or sweet corn (optional)
1 tabsp. Jaggery chopped (or acc. to taste)
Salt to taste

Grind to a fine paste without water:
1 lemon size ball of Soaked tamrind (squeeze out water)
8-10 kashmiri red chillies soaked in 100 ml. vinegar for 30 mins.
(use the same vinegar for grinding)
5 cloves, 5 cardamoms, 2″ piece of cinnamon, 10-12 Black Pepper,

Method

In a non-stick pan fry  the potatoes cubes remove and keep aside
In the same ghee fry  onion till golden,
add ginger garlic paste and sauté for few seconds,
add Masala paste grounded in vinegar, sauté for a minute or two
add tomato puree and stir for 5 minutes
Add mutton cubes and stir on a high flame stirring continuously.
Add water and cook till mutton  is  semi cooked
Add salt to taste

Add corn or peas (optional)

Add fried potato cubes

Add chopped Jaggery and stir till it melts
Stir well and let it simmer till gravy becomes thick.

Jaggery and vinegar can be adjusted according to sweet and sour taste.
